Happy Friday, peachy cook!

Before we know it, stone fruit season will be over, and all of a sudden I have this dessert on the brain: Peaches al Forno from Jody Williams and Rita Sodi’s Via Carota cookbook.

It may be the easiest dessert in the universe. It’s absolutely the best thing to come out of my kitchen with such minimal effort, perfect for Labor Day weekend, when you don’t really want to labor.

Two minutes prep (you don’t even have to peel the peaches), and 10 minutes in the oven — seriously it’s prep-to-table in 15 minutes.

And it’s so good.
