The other day, while enjoying a giant batch of my Way Better Three-Bean Salad, I noticed that many of the things I love to eat this time of year happen to be vegan. Then came news that I’ll have a vegan house-guest next week. (Hello, Sophie! Can’t wait!)

Naturally I’ll subject her to that groovy bean salad. But what else?
