This recipe is adapted from Jubilee: Recipes from Two Centuries of African American Cooking by Toni Tipton-Martin, who drew inspiration for it from Mama Dip’s Family Cookbook by Mildred Council.

It’s the ideal picnic or pot-luck dish, as it’s designed to travel well and be tossed on arrival.

Rather than have you buy an entire carton of buttermilk for just a few tablespoons, I’m folding into the recipe a make-your-own-buttermilk-substitute.

Serves 6.

Ingredients

FOR THE GARLIC AND HERB DRESSING:
  • 1/3 cup (78 ml) whole milk

  • 2 teaspoons lemon juice, divided

  • 1/4 cup (57 grams) mayonnaise

  • 1/4 cup (57 grams) sour cream

  • 1 teaspoon fresh lemon juice

  • 1/2 teaspoon tarragon vinegar (or 1 teaspoon chopped tarragon leaves and 1/2 teaspoon red wine vinegar)

  • 1 tablespoon chopped fresh chives

  • 1 tablespoon minced fresh parsley

  • 1 1/2 teaspoons minced fresh dill
