New-wave sauce gribiche turns basic potato salad into a side-dish rock star. If you’re using tiny fingerlings, cut them in half rather than slicing them.

Serves 8 to 10 or more as a side dish.

Ingredients

  • 2 pounds red potatoes (small or medium-sized)

  • 1 recipe New-Wave Sauce Gribiche

  • 1 tablespoon freshly squeezed lemon juice

  • 2 teaspoons champagne vinegar

  • 2 tablespoons olive oil

  • 1/4 teaspoon salt or to taste

  • Freshly ground black pepper

Instructions

  1. Place scrubbed potatoes in a large pot of salted water and bring to a boil over high heat. Reduce heat to medium-high and boil for 15 to 25 minutes (depending on their size), or until potatoes are just cooked through.

  2. Drain the potatoes in a colander and run water over them to cool them. Let them dry, and when they're cool enough to handle, cut them into thick slices and place them in a large bowl with the new-wave sauce gribiche, the lemon juice, the vine…
