I fell in love with the salted yogurt drink known as Ayran when traveling in Turkey, where it’s served everywhere. (It’s known as doogh or dugh in Iran, and salted lassi in India and Pakistan.) You can use any kind of whole-milk yogurt to make it: cow’s milk, goat’s milk or sheep’s milk.

Serves 1.

Ingredients

  • 2/3 cup whole milk yogurt

  • 4 ice cubes

  • 1/4 cup water

  • 3/8 teaspoon salt

Instructions

  1. Place the yogurt, ice cubes and salt in a blender and blitz until it’s frothy.
